I'm so sorry, I should have realized this earlier. JIRA and Confluence are great programs, but what a PAIN to set up and maintain, especially without a dedicated server with 2 gig of RAM. It's not very feasible.

I'm thinking of switching to Trac, but I want some feedback... any other good options?

There's also Bugzilla (I have no idea what I'm talking about though because I've never really been involved on a development team, so I don't know that advantages/disadvantages are good).

Anything works for me. I just gotta learn to use it to help with the documentation.

Most of the projects ive been involved with used Trac. Its not perfect, but ive never heard of another solution that does all the things trac can do and do it better.
