Just out of curiosity how long should refreshing the metadata take. Whether I'm refreshing 1 40 image album or the whole gallery it seems to go on forever. Would refreshing for 20,000 images take several hours, minimum?

Sure would be nice to have a progress indicator, although I know that's asking a lot.

I have 100 images with no date scattered throughout the gallery. When I upload the corrected file, I'm having a hard time getting the the database to pick up the change in metadata, even when I only refresh it's specific album.

refreshing the metadata of all your images involves reading the image file for each and processing the imbedded data. I've never seen that take very long, though. Ofcourse your processing time will depend on the capabilities of your server. Opening images can take quite a bit of memory so your server may be thrashing.

You should look into your error logs and see if maybe there are some images that are causing problems. We have had in the past mal-formed images that cause the processing to crash. Of course that does effect only the mal-formed image.

Which log are you referring to? Do you mean my Apache logs?
