Is there a way to sort the gallery maybe by years or maybe spliting up the gallery in subsections like "albums about nature" and "albums for portraits" "albums shooting lizards", you know?

You can set the sort on any field of the database. See the custom sort setting. So you could set a category into the "custom data" field and make the sort on that.

Also, why don't you use subalbums or tags?
