When I use the drop down to add a new subfolder, it doesn't show the main photo album that I want to put it into. It just shows the already existing subfolders. How can I add a subfolder to the main folder?

You need to tell the upload facility that you want to create a new album. It will offer you a field to place the title/folder name of the new album. The dropdown is just for placing within existing albums.
