I made an extra page using Zenpage but something is not right in the breadcrumb section.
Inbetween Index and Patronen is &raqou instead of >> like in the albums.
What went wrong and how do I fix this.

Which folder or part do I have to replace? Zenpage?

Probably just Zenpage might solve it. But generally you should update the whole installation as there are often interactions we don't test separately.
