Alphabet Sort and Album Count

why do all the themes default to 5 albums per page?

Where is the 5 set? I'd like to have 20 albums per page.

How do I make everything (admin and public themes) just sort alphabetically by album name?

    its set in the bottom of zen/zen-config.php

    If you use the latest SVN you can change it using the Admin tab called "Options"
