Do you really the admin backend (e.g logo)? Then use the plugin fretzl referred to.

If you mean the user name of your ZEnphoto admin user the name cannot be changed afterwards (only the full name can). If you want to use another user name you have to create a new user with all rights and delete the old one afterwards.
