I need to move my gallery under a new domain name (new url) on the same serveur, what would be the best way to do it?

Once moved all folders under new name i would need to configure the new url but where exactly?

One addition the section "Moving on the same server" misses somehow. If you only want to use a new or another domain on the same server you don't need to copy or move anything physically at all.
Your webhost surely provides a backend functionality to set the target of domains.

Say your Zenphoto install is in the root of your webspace: yourolddomain.com Then you only have to point the new domain yournewdomain.com to the same location and it will work with it (remember to make one domain to the main domain to avoid duplicated content - that's another topic though).

If you had your Zenphoto install in a subfolder yourdomain.com/zenphoto and would like to move it under the domain itself, you don't need to move the files. You can just point your domain to that folder and Zenphoto will work as yourdomain.com.

I hope it is clear what I mean… You should run setup in any case of course after doing so.
